Ingredients:
1 1/2 cup shredded coconut
1/4 tsp salt
3 tbsp freeze dried pink pitaya powder (we like UnicornSuperfoods)
1/3 cup coconut cream
1 tbsp D'vash date syrup
1 tbsp coconut oil
1 tsp vanilla extract
1 cup dark chocolate
- Line a baking sheet with parchment paper, set aside.
- Place all the ingredients in a food processor, pulse until combine and a sticky mixture is formed.
- Roll the mixture into 1 tbsp size balls and place them on the prepared baking sheet.
- Place them in the fridge to set for at least 1 hour.
- Melt chocolate in the microwave
- Dip the balls in chocolate then refrigerate for 15 minutes.
